Fruit Snack Cakes

These recipes are quick and easy to prepare and can be enjoyed anytime.

Fresh apples and raisins keep the Apple Snack Cake moist, which cuts added fat. The Blueberry Snack Cake is filled with fruit; lemon zest adds an unexpected hint of citrus.

Apple Snack Cake

5 c. tart apples, cored, peeled, chopped
1 c. sugar
1 c. dark raisins
1/2 c. pecans, chopped
1/4 c. vegetable oil
2 t. vanilla
1 egg, beaten
2 c. all-purpose flour, sifted
1 t. baking soda
2 t. ground cinnamon

Preheat oven to 350° F. Spray a 13-by-9-by-2-inch pan with nonfat cooking spray. In a large mixing bowl combine apples with sugar, raisins, and pecans. Mix well and let stand for 30 minutes.

Stir in oil, vanilla, and egg. Sift together flour, soda, and cinnamon, and stir into apple mixture, about a third at a time—just enough to moisten dry ingredients. Turn batter into pan. Bake for 35 to 40 minutes. Cool cake slightly before serving. Serves 20.

Blueberry Snack Cake

1 c. low-fat lemon yogurt
3 T. vegetable oil
2 egg whites
1/2 c. sugar
1-1/2 c. flour
1 T. grated lemon peel
2 t. baking powder
1/2 t. baking soda
1/4 t. salt
1-1/2 c. fresh or thawed and drained frozen blueberries

Heat oven to 375º F. Spray a 9-by-9-by-2-inch square pan with nonfat cooking spray. Beat yogurt, oil, egg whites, and sugar in a large bowl. Stir in remaining ingredients except blueberries. Carefully stir in blueberries. Spread all ingredients in pan. Bake about 45 minutes or until cake springs back when touched lightly in center. Cool 10 minutes. Serves eight.
