Lemon Meringue Kisses

2 egg whites
½ cup Splenda
¼ tsp. vanilla
1 tbsp. lemon curd (commercially prepared lemon curd can be found in the supermarket next to the jams and jellies)

Preheat oven to 300 degrees. Beat egg whites until they begin to hold a soft peak. Gradually add Splenda and continue beating until egg whites are stiff. Beat in vanilla. Drop by teaspoon onto a nonstick baking sheet—or pipe the meringue from a pastry decorator. Bake for 25 minutes. Remove from the oven, make a small indentation in each kiss, and drop in a dab of lemon curd. Makes 24 cookies.

Dark Chocolate Chip Oat Bars

1 large egg
1/2 cup fat-free yogurt (plain or vanilla)
1/2 cup Splenda brown sugar blend
1½ cups quick oats
2 tbsp. milled flaxseed
¼ cup bittersweet chocolate chips
Cooking spray

Whisk egg with yogurt and brown sugar. Blend in oats and flaxseed. Add chocolate chips. Spread mixture in an 8-inch-square pan coated with cooking spray. Bake at 350 degrees for 30 minutes. Let cool, then cut into 12 bars.
